Quick & Easy White Choc & Macadamia Nut Cookies

INGREDIENTS

125 grams butter

1/3 cup caster sugar

1/3 cup brown sugar

1 egg

3/4 cup SR flour

3/4 cup plain (all purpose) flour

1/2 cup raw macadamia nuts, roughly chopped

3/4 cup white choc chips or white chocolate of your choice, chopped roughly

  1. Pre-heat oven to 180 degrees Celcius (160 fan-forced).

  2. Line an oven tray with baking paper.

  3. Using an electric mixer cream butter, caster sugar and brown sugar together until light and fluffy and sugars dissolved.

  4. Add the egg and beat until combined.

  5. Add both of the flours to the bowl and stir with wooden spoon until combined, then add nuts and chocolate and mix together.

  6. Drop dessertspoons of mixture onto baking tray allowing room for spreading, then push each own down slightly with the palm of your hand to flatten.

  7. Bake in oven 10-12 minutes or until golden.

  8. Remove cookies from oven and onto wire rack to cool.

Cookies will keep 3-4 days in air tight container. (If they last that long!)
