Orange Cake

INGREDIENTS

280 grams butter

1 cup sugar

2 eggs

1 tbs grated orange rind

1/4 cup milk

1/4 cup orange juice (fresh)

1 & 2/3 cups of self raising flour

Icing:

2 cups icing sugar

1 tbsp butter

Juice of 1/2 orange

  1. Preheat oven to 180 degrees Celsius (160- degree fan-forced) and grease & line a round cake tin.

  2. In a mixer bowl combine on medium speed the butter and sugar until smooth and creamy.

  3. Add eggs and beat until combined and then stir in orange rind.

  4. Fold in 1/3 of the flour until combined, then add 1/3 of the milk, and 1/3 of the orange juice and stir. Repeat until all ingredients are combined well and the mix is smooth.

  5. Pour into prepared pan and bake in the oven for approx. 35-40 mins or until a skewer inserted comes out clean. Cool in pan for 10 minutes, then turn out to finish cooling on a wire tray.

  6. When cool, ice with orange icing (mix all ingredients until thick and smooth) and sprinkle with coconut if desired.
